When you’re trying a tasty weekend lunch concept, these Couscous pockets are simply the factor! Cook dinner a packet of roasted veg Couscous, by overlaying in boiling water. Combine with carrot and cucumber sliced into ribbons with a vegetable peeler, some chopped Sundried tomatoes and a little bit of crumbled feta. Season and place in some pitta pockets.
