Smoky Bean & Halloumi Stew…I’m SO bored of our common dinners. I really feel like I have been cooking the identical issues for 678 days in a row😂 This was a brand new one and all of us cherished it…I served it with herby new potatoes and garlic bread. Made for a fairly bizarre combo, however served with rice it could be good. Recipe is beneath for those who fancy altering it up this week🥰
1 onion finely sliced
1 yellow pepper finely sliced
1 crimson pepper finely sliced
Oil for frying
Heaped tsp smoked paprika
Block of halloumi cheese
400g baked beans
400g tin chopped tomatoes
50ml boiling water
A big handful of contemporary spinach
Salt and pepper .
-Warmth the oven to 200C
-Place the onion, peppers and a drizzle of oil in a big, oven proof pan.
-Fry on a medium warmth for 7 minutes till smooth.
-Reduce half of the halloumi block into small cubes and add them to the pan with the paprika. Fry for two minutes -Stir within the baked beans, tinned tomatoes, boiling water, spinach salt and pepper.
-Deliver to the boil, stirring till the spinach has wilted.
-cut the remaining halloumi into slices and punctiliously lay it excessive of the stew.
-Bake for 25 minutes or till the halloumi is golden brown
