Leek, Potato & Bacon Soup. I had three rashers of bacon left from the sausage and bacon stew that I made earlier within the week, so I assumed I’d use it up on this soup! Provides it a bit of additional kick and flavour…..
Roughly chop three leeks and place them in a big saucepan. Add to the pan, three finely chopped smoked bacon rashers and a drizzle of olive oil. Fry for five minutes till the leeks have some color and the bacon is starting to crisp. Add 800g of peeled and cubed potatoes, 2 vegetable inventory cubes, some floor black pepper and 1.6 litres of boiling water. Stir, cowl and simmer for 15 minutes, or till the potatoes are tender.
