Lastly managed to get my fingers on some tins of veggie sausages with baked beans. So, I had a go at making a meat free model of the Sausage, Cheese and Bean Bakes! Good little bit of consolation meals, now that the solar appears to have disappeared 😏

Makes four Bakes
.
2 sheets of prepared roll puff pastry
2 x 400g tins of baked beans and vegetarian sausages
2 x handfuls of grated cheese
1 overwhelmed egg
Floor black pepper

Take the puff pastry from the fridge and lay it out on a worktop, lined in a clear tea towel 20 minutes earlier than you want it
Warmth the oven to 200C
Grease a big baking tray.
Lower one of many pastry sheets in half widthways, then in half once more.
Place two items of pastry on the baking tray.
Pour the beans and sausages right into a mixing bowl. Lower the sausages in half and mash the beans a bit with a fork.
