Halloumi & Veg Curry…I’ve made this for dinner tonight. We’re having it with wedges once more. In all probability appears to be like like an odd combo, however truthfully it tasted SO good… 😂 In the event you’ve not made this but, recipe is beneath. Completely happy Wednesday x

Serves 3-4
.
Oil for frying
Block of Halloumi lower into cubes
1 onion finely sliced
100g tenderstem Broccoli
A handful mangetout
A handful trimmed inexperienced beans
1 pink pepper finely sliced
1 tsp chilli
1 tsp turmeric
1 tsp cumin
1 tsp coriander
400g tin coconut milk
100ml boiling water
Salt and pepper

Warmth a bit of oil in a big, non stick saucepan.
Add the Halloumi cubes to the pan and fry on a medium warmth for round 7 minutes, turning recurrently till golden brown.
Set the Halloumi apart
Place the onion, broccoli, mangetout, inexperienced beans and pink pepper within the pan with a bit of extra oil. Fry on a medium warmth for five minutes, stirring recurrently.
Add the chilli, turmeric, cumin and coriander. Stir and fry for 1 minute.
Stir within the coconut milk, boiling water and seasoning.
Simmer with the lid on for 10 minutes, or till the veg is tender.
Stir within the Halloumi, warmth by and serve.
