Aldi have just lately began promoting an even bigger choice of tinned beans – butter beans, borlotti beans – so I assumed I’d use them in a recipe! That is my Sluggish Cooked Chorizo and Bean Soup. It’s bursting with flavour, simple to make and simply the factor to heat you on these chilly evenings!
1 Onion
1 spicy chorizo ring
1 pink pepper
1 x 400g drained tin of kidney beans
1 x 400g drained tin of butter beans
1 x 400g drained tin of borlotti or combined beans
1 x 400g tin of chopped tomatoes
1 tsp Honey
900ml Vegetable inventory
Olive oil for frying
Finely chop the onions and pink pepper and place in a big saucepan or pan from the sluggish cooker. Drizzle in olive oil and fry on a low warmth for five minutes.
Chop the chorizo into small items and add to the pan. Fry for an additional 5 minutes, stirring often. Add the honey for the final 2 minutes.
Add the three tins of beans, tin of chopped tomatoes and inventory. Stir and season with salt and pepper.
Place within the sluggish cooker and cook dinner on excessive for four hours (or low all day if you wish to put it on earlier than you go to work)
