These Bombay Potato Wraps are vegetarian, easy to make and SO tasty….likelihood is, you’ll have already got a lot of the components!! Diced Potato, Tomato, onion and spices in a wrap with salad and a dollop of yoghurt!! You’ll be able to even add some rice if you wish to make it a burrito wrap 👍Peel 900g of Potatoes and lower them into 3-5cm cubes. Place in a big saucepan of salted water and convey to the boil. Simmer till the potatoes are 80% cooked. Lower an onion into slithers and add to a pan with a drizzle of oil. Fry gently for five minutes till delicate. Add a finely chopped clove of garlic, a thumb of peeled and grated recent ginger, 2 tsp floor Coriander, 1 tsp cumin, 1tsp chilli powder, 1 tsp turmeric and 1 heaped tsp if garam masala. Stir and fry for two minutes. Add 100ml of water to the recent pan together with the drained potatoes. Add 2 recent tomatoes lower into small items and simmer till the potatoes are simply tender. Season with salt and pepper and serve on a tortilla wrap with recent coriander and somewhat yoghurt or mayo ❤️
