Roasted Vegetable & Mozzarella Tart… I like this one. I roast the veg in some purple pesto to offer it a stunning wealthy Sundried Tomato flavour. Unfold over a sheet of puff pastry, high with slices of mozzarella and a some contemporary thyme and bake within the oven. Really easy, a good way to make use of up veg and there’s leftovers for lunch! Your kind of dinner?? A xx
