Ricotta & Spinach Tortelloni……okay, so I did not truly make the pasta, however the sauce is all me! 😀
Generally you want a simple win at time for supper and this matches the invoice. Cucina Ricotta & Spinach Totelloni. Solely 89p in Aldi,lots for 2 and solely four minutes to prepare dinner!
So I did not really feel too responsible about my simple dinner, I knocked up a fast sauce: Slice an onion and purple pepper into equal sized items, drizzle in olive oil and fry for five minutes till mushy. Add a finely chopped clove of garlic and a handful of torn up recent herbs (I used a combination of basil, mint and thyme)to the pan for the final 2 minutes of frying. Add roughly 200g of passata, stir and blitz with a hand blender till clean. Serve with any pasta and end with some grated Parmesan cheese!
