My Halloumi Traybake acquired a makeover! Halloumi, child corn, sugar snap peas, tender stem broccoli, candy potato and rice- with a Peri Peri kick! I’ve written up the complete recipe under – let me know in the event you give it a attempt! x

200g tenderstem broccoli
200g babycorn minimize in half lengthways
A big handful of sugar snap
2 medium candy potato minimize into chew measurement items
1 onion finely sliced
Olive oil for roasting
2 tsp piri piri seasoning
Block of halloumi minimize into medium cubes
2 x 250g pouches of cooked rice (I used wholegrain)
Salt and pepper .

Warmth the oven to 180C
Place all of the veg in a big roasting tin.
Combine the a beneficiant drizzle of oil with Peri peri seasoning. Pour the oil over the veg. Use your arms to make sure all of the veg is coated.
Roast within the oven for 10 minutes.
Flip the veg over and place the halloumi on high. Roast for an additional 15 minutes.
5 minutes earlier than the veg is due out of the oven, microwave the rice to packet directions till heated via.
Stir the rice into the veg and halloumi with a drizzle of olive oil and season with salt and pepper.
