Elfe Potatoes & Gremolata Salmon. Flakey salmon with a nut, parsley, caper, lemon and garlic crumb on a mattress of Elfe potatoes! Solely 15 minutes to get this on the desk and (regardless of considering it was extra of a grown ups dinner) the children beloved it!

I am going to pop the hyperlink in my profile if you wish to take a look… Within the meantime, I’ve written up this recipe beneath and for those who’ve not tried Elfe potatoes but…I can HIGHLY suggest!

500g Elfe Potatoes (reduce into medium peices with pores and skin left on)
1 tbsp rapeseed oil
Four skinless and boneless salmon fillets
1 tbsp olive oil
Four tbsp contemporary flat leaf parsley (finely chopped)
2 tbsp pine nuts (roughly chopped)
2 garlic cloves (peeled and finely chopped)
zest of 1 lemon
1 tbsp capers
Floor black pepper
1 bag of blended leaves (to serve)

1. Cook dinner the Elfe potatoes in a medium pan of boiling water for 12/14 minutes or till simply tender. Drain, then put aside.
2. Spray a bit rapeseed oil in a big non-stick frying pan then cook dinner the salmon fillets over a medium warmth for 3–Four minutes on either side or till cooked to your liking.
3. To make the gremolata, mix 1 tablespoon olive oil with the parsley, chopped pine nuts, garlic, lemon zest and capers in a medium bowl, then season with floor black pepper. Put the potatoes in a serving dish, high with the cooked salmon fillets and sprinkle with the gremolata.
4. Serve with blended leaves asparagus or any inexperienced veggies.
